Haystack Ingredients
- rice
- Chow Mein Noodles
- pineapple chunks
- your choice of an assortment of things such as shredded cheese, mandarin oranges, coconut shreds, chopped onions, peppers, celery, tomatoes, olives, peas, nuts, etc.
- 1 large chicken breast
- 1 chicken bouillon cube
- 3 tbsp. butter
- 3 tbsp. flour
- 2 cups milk
- seasonings: paprika, lemon pepper, Jane's Krazy Mixed Up Salt
- Cook rice according to directions.
- Place 1" water in a saucepan. Dissolve bouillon in water. Place chicken in water and sprinkle seasonings over the chicken. Cover and let simmer on medium-low heat for 30-40 minutes or until chicken is tender.
- Remove pan from heat. Leaving chicken in water, cut or shred chicken into small/medium pieces (or take it out and cut it up and replace it in the water quickly). Sprinkle flour over chicken and stir well. Add butter and milk. Cook and stir over medium heat until butter melts. Continue stirring and cooking until gravy boils and thickens. (To increase thickness, add cornstarch or reduce heat and simmer.) Remove from heat.
- Place a scoop of rice on a plate or in a bowl and pour gravy on top. Add chow mein noodles and your choice of toppings and enjoy!
