Hawaiian Haystacks

Hawaiian Haystacks with Chunky Chicken Gravy

Prep time: 5 min.
Cook time: 50 min.
Serves: 2

Haystack Ingredients
  • rice
  • Chow Mein Noodles
  • pineapple chunks
  • your choice of an assortment of things such as shredded cheese, mandarin oranges, coconut shreds, chopped onions, peppers, celery, tomatoes, olives, peas, nuts, etc.
Gravy Ingredients
  • 1 large chicken breast
  • 1 chicken bouillon cube
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 2 cups milk
  • seasonings: paprika, lemon pepper, Jane's Krazy Mixed Up Salt
Directions
  1. Cook rice according to directions.
  2. Place 1" water in a saucepan.  Dissolve bouillon in water.  Place chicken in water and sprinkle seasonings over the chicken.  Cover and let simmer on medium-low heat for 30-40 minutes or until chicken is tender.
  3. Remove pan from heat.  Leaving chicken in water, cut or shred chicken into small/medium pieces (or take it out and cut it up and replace it in the water quickly).  Sprinkle flour over chicken and stir well.  Add butter and milk.  Cook and stir over medium heat until butter melts.  Continue stirring and cooking until gravy boils and thickens.  (To increase thickness, add cornstarch or reduce heat and simmer.)  Remove from heat.
  4. Place a scoop of rice on a plate or in a bowl and pour gravy on top.  Add chow mein noodles and your choice of toppings and enjoy!

Fettuccine Alfredo with Chicken

Fettuccine Alfredo with Chicken

Servings: 6 (if you want to make it for less, just cut it in half!)

(By The Way: Feel free to experiment according to your personal preferences)

Ingredients:

1 lb. fettuccine noodles
2 cups cut up boneless chicken pieces
1 stick butter
1 cup heavy whipping cream
2 cups shredded (or freshly grated) parmesan cheese
lemon pepper seasoning
salt (I recommend Jane's Krazy Mixed-Up Salt to take the place of both salt and pepper)
pepper
garlic salt

Chicken:

Cut up the chicken in bite-size pieces (whatever that means for you!).  Put in a pot with just enough water to cover the top of the chicken.  Add seasoning (lemon pepper seasoning, salt, pepper).  Bring to a boil then immediately bring heat to low and simmer for about 15-20 minutes.

Noodles:

Bring a pot of water to a boil, add noodles and let cook for 12-15 minutes, stirring occasionally.

Alfredo Sauce: (the best part!)

In a large skillet-type pan, melt butter on medium-low heat.  Add heavy whipping cream.  Add seasoning (salt, pepper, garlic salt).  Mix in cheese and stir to help it melt.

*Note: If you want more sauce than what that makes initially, just keep adding heavy whipping cream and cheese until you have the desired amount!

Wrapping It Up:

Once everything is cooked up, drain the noodles and chicken (you can save the yummy chicken broth this makes for another recipe!) and add them to the sauce.  Mix it around and serve!

*Note: Try some variations: without the Chicken; with Shrimp instead of Chicken.
